  • Eating fat with vegetables enhances absorption of vitamins and anti-oxidants.

Vegan Corn Bread
~ from "Food for Life" by Neal Barnard, M.D.

1 1/2 cups soy milk
1 1/2 TBS vinegar
1 cup cornmeal
1 cup whole wheat pastry flour
2 TBS sugar
3/4 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
2 TBS oil
· Preheat the oven to 425 degrees.
· Combine the soy milk and vinegar and set aside.
· Stir the dry ingredients together in a large bowl,
· then add the soy milk mixture and oil, and mix until just blended.
· Spread batter into a non-stick or lightly oiled 8-inch square baking dish, bake for 25 to 30 minutes,
or until a toothpick inserted in center comes out clean.
Makes 8 servings
